2.1.4.1.5 당도측정법(굴절계측정법)

가. 시험법 적용 범위

하나의 과일 혹은 채소로 만들어진 과일·채소류음료에 대한 당도 분석에 적용한다.

나. 분석원리

과일·채소류음료 등에 자당(설탕) 농도에 따른 밀도의 변화를 굴절계를 이용하여 측정한다.

다. 시험기구 및 시약

1) 압베굴절계(Abbe refractometer)

2) 휴대용 굴절계(Hand-held refractometer)

3) 디지털굴절계 및 디지털밀도측정계(Digital refractometer or digital densitometer)

라. 시험조작

굴절계를 20℃ 증류수를 이용하여 충분히 씻어준 후 영점을 보정하고, 검체는 균질화하여 온도 20℃ 물에 담그어 약 5분 정도 충분히 온도를 유지시킨 후 측정한다. 이때, 굴절율값(RI, Refractive Index)을 측정하여 [표 1]의 설탕물굴절율표를 이용하여 °Brix(설탕%값과 동일)를 구하거나, 사용한 기기에서 직접 표시되는 °Brix값을 읽는다. 또한, 온도를 관리할 수 없을 때에는[표 2]의 설탕물굴절율표에 대한 온도보정표를 이용하여 20℃ 결과로 변환하여 측정결과를 얻는다.
